Fruits and Veggies

Guess what?! For once in our married life, the fruits and vegetables we bought for the last few weeks (mostly at CostCo, in bulk) were eaten BEFORE any of them rotted! This is pretty much a miracle and we owe it to the Biggest Loser! It's been a lot of fun to make sure we are eating fruits and vegetables more and we are enjoying the challenge.

...Maybe this next week I'll work on the exercise part more and not just eating healthily alone... :)

What's a new fruit or vegetable you like that we should try for something new (okay, and for a few points...)?

One thing that the Whites like with some of their dinners is jicama (pronounced HICK-eh-muh). It kind of looks like a giant potato and it's got white meat inside. It's sweet and crispy; both it's texture and sweetness are probably in between those of potatoes and apples.

The Whites just eat them in sliced pieces (peel the skin off), and it's better refrigerated.

You can find it at Wal-mart; I saw it there just the other day.

I've actually tried jicama, but never purchased and eaten it at my home. It is kinda good, huh?

edamame (I think that's how you spell it) - a soybean. I know you can get them frozen... don't know about how accessible to get them fresh
